Ingredients: Whole green moong (sabut moong) – 1 cup (soaked overnight) Curd (dahi) – 1 cup (slightly sour ) Besan (gram flour) – 1 tbsp (helps thicken and bind) Green chilies – 2 (finely chopped) Ginger – 1 tsp (grated or paste) Mustard seeds – 1 tsp Cumin seeds – 1 tsp Hing (asafoetida) – a pinch Curry leaves – 6–8 Haldi (turmeric) – ¼ tsp Salt – to taste Sugar or jaggery – ½ tsp (optional) Oil or ghee – 1 tbsp Water – as needed Fresh coriander and kasoori methi – for garnish Steps: - Soak moong overnight or for 6–8 hours. Pressure cook it with some water and turmeric for 2 whistles until soft but not mushy. Prepare the curd mixture: Whisk curd, besan, and ½ cup water until smooth and lump-free. Keep aside. In a kadhai, heat oil/ghee. Add mustard seeds and let them crackle. Add cumin, hing, curry leaves, green chilies, and ginger. Sauté for 30 seconds. Add the curd mix: Lower the flame and slowly add the curd-besan mix while stirring constantly (to prevent curd from splitting). Cook for 5 minutes on low flame until slightly thickened. Add cooked moong and adjust water consistency according to your choice Add salt, and optional sugar/jaggery to balance the sourness. Simmer on medium flame for few more minutes Add final tadka (desi ghee, green chillies, garlic, hing, dried red chillies, red chilli powder) Top with fresh coriander and kasoori methi and serve hot. . .
