One pot. Simple steps. Perfect pulao every time ✨ This is why I love making quick meals in my Pigeon Special Pressure Cooker — minimum effort, maximum flavour, and such consistent results. This veg pulao came together in minutes, perfectly fluffy and full of flavour. A total lifesaver on the days you want something wholesome without spending too long in the kitchen One-Pot Veg Pulao Ingredients 1 cup basmati rice (rinsed & soaked 15 mins) 1.5 cups water 2-3 tbsp ghee 1 medium onion, thinly sliced 1 tbsp crushed ginger–garlic–green chilli paste 1–1.5 cups mixed vegetables (carrot, peas, beans, cauliflower, capsicum, potatoes) 1 bay leaf 1 small cinnamon stick 3–4 cloves 3–4 peppercorns 1 tsp cumin seeds 1 tsp turmeric 1 tsp kashmiri red chilli powder 1.5 tsp coriander powder 1/2 tsp garam masala 1 tsp biryani masala Salt to taste Fresh coriander, chopped (for garnish) Heat ghee in your pressure cooker on medium flame. Add all the whole spices (bay leaf, cinnamon, cloves, peppercorns, cumin). Sauté for a few seconds until aromatic. Add the crushed ginger–garlic–green chilli paste followed by sliced onions. Brown them on medium heat until golden Add your mixed vegetables along with the spice powders - turmeric, kashmiri red chilli powder, coriander powder, garam masala, biryani masala and salt. Sauté everything together for 2-3 minutes. Add the soaked & drained rice. Pour in 1.5 cups water and give a gentle stir to mix everything together. Pressure cook on medium heat for 2-3 whistles, then switch off the gas and let the pressure release naturally for best texture. After 10 minutes, open the cooker & fluff the pulao gently with a fork.
