Today I turned up the heat with pesto pasta, right in my Pigeon cast-iron pan. πŸ₯¦πŸ That perfect sear. The even heat. And the flavour retention that only cast iron gives. Why I love this Pigeon pan: pre-seasoned, toxin-free, naturally non-stick (so less oil, more taste), works across all stovetops (yes, induction too), and built to last. When your pan is this reliable, you can worry about plating, not pan-problems. Ingredients For the pesto 2 cups fresh basil leaves Β½ cup peeled almonds 5-6 garlic cloves Β½ cup extra virgin olive oil Β½ cup freshly grated Parmesan cheese Salt, to taste For the pasta 250 g penne pasta 1 tbsp olive oil 3-4 garlic cloves, chopped 1 cup fresh cream ½–¾ cup grated Parmesan cheese Β½ cup reserved pasta water 2–3 tbsp pesto (prepared above) Chili flakes & extra Parmesan, for garnish Method Make the pesto: Crush garlic and almonds in a motor pestle. Add basil, salt, and olive oil, and pound to a coarse paste. Mix in Parmesan. (Alternatively you can also grind this in a mixer jar using the pulse mode) Cook the pasta: Boil pasta in salted water until al dente, saving some water. Prepare the sauce: Heat olive oil in a pan, sautΓ© garlic, add pasta water and cream. Let it simmer, then stir in Parmesan. Combine: Add boiled pasta and toss well. Switch off the flame, mix in 2–3 tbsp pesto. Serve: Garnish with chili flakes and extra Parmesan.
