Make the Gravy: In a blender, make a smooth paste of ginger, cashews, melon seeds (charmagaz), and fresh cream. Add this paste to the pan and sauté well. 5. Spice It Up: Add cumin powder, coriander powder, red chilli powder, salt, and turmeric. Cook until the oil starts separating. 6. Add Liquid and Simmer: Pour in some hot water and bring the gravy to a boil. 7. Final Touches: Gently add the paneer koftas to the gravy. Add saffron soaked in warm milk, a bit of sugar, and slit green chillies. 8. Finishing: Finish with a sprinkle of garam masala powder and a drizzle of fresh cream.
